Ultra-processed foods, particularly those containing grains and high levels of carbohydrates and lectins, can perpetuate low-grade inflammation in the gut. Even non-grain foods with legumes like pea-derived proteins can be high in lectins that aggravate the gut lining and cause perpetual low-grade inflammation. High glycemic index foods also contribute to inflammation in the intestine.
